The bloom seals the pores of the eggshell to prevent bacteria and other contaminants from entering the egg. The bloom also preserves moisture and freshness.
You can keep unwashed eggs at room temperature for 3 weeks or in the refrigerator for up to 3 months.
Washing the eggs removes the bloom.
Eggs without the bloom must be refrigerated and will last for about 2 months in the refrigerator.
Wash eggs in warm water before consuming.
